Don’t Underestimate…

Do not underestimate the power of some of the moments we take for granted.

Like a phone call with your mom or dad.

Or a completely crossed-off to-do list.

A weeknight off from cooking for the best salad bar in town.

Salad from The Mix in Flagstaff | Stronglikemycoffee.comTuesday morning began differently than usual. I had a Face Time conference call at 8:00am, Eastern Time. I’m a West Coast girl, so I was not-so-bright-eyed-and-bushy-tailed at 5:00am. A pre-coffee meeting, oh my. The earlier-than-usual Tuesday called for some additional coffee and serious motivation to get through my workout in the gym.

After a banana, I decided to break up my “strictly running” pattern with a little time on the elliptical. When I made it to the fitness room, I saw Father of the Bride on TV. Classic! I loved this movie when I was little, and its sequel equally so. My hour split between the elliptical and the treadmill ended with just enough time to shower and look business-professional for a presentation in my last class of the day.

Healthy College Girl Blog | Stronglikemycoffee.comI sat through my last advertising lecture (it’s all just a big group project from here on out!) and started to become more nervous for my presentation later in the afternoon. Every semester ends with multiple presentations, but this one in particular was one-on-one with my professor in his office. Immediately afterwards, he gave feedback which I really appreciated. All my nerves were for nothing and I could look forward to the rest of my evening hanging out with one of my best friends. :)

First I threw off my heels and changed into boots and a sweater. Before we headed downtown for dinner and shopping, we decided on a pit stop to one of the parks where we would have cross country practice at least once a week. There was a whole herd (okay probably not a herd….like 10 or 12) deer munching on grass right next to us as we walked by! (Reminded me of the time was just stumbled upon some elk in the Grand Canyon!)

Sunset at Buffalo Park in Flagstaff, AZ | Stronglikemycoffee.comWalking around the park was a phenomenal idea because there were surprisingly SO MANY walkers, joggers and runners out. I love being around lively, active, fit people. Whenever I’m in a desolated place, I always wonder why no one else is out and about. It’s a beautiful day, why are people inside?! :) That’s one of the things that I loved best about visiting Boise, ID. It’s an ACTIVE community, that was for sure.

We talked nonstop for a couple hours and had to fuel up with some AMAZING salads at The Mix. I added tomato, bell pepper, cucumber, carrots, edamame, sunflower seeds, kiwi, grapes, strawberries, mandarin oranges, yams, corn, and housemade gluten-free croutons to mine with some chipotle orange vinaigrette on the side. I took a pretty picture and then demolished it ;)

Re-fueled, we walked around the shops a little more and I ended up buying a couple cute patterned headbands with bows because they looked very “Southern.” It’s a girl thing, right?!

Don’t underestimate the re-energizing power of a night out, fresh air, fresh food, and a fresh perspective from someone else. I can easily let my inner happiness get swallowed up by the stress of any situation but I am lucky enough to have incredible people in my life to remind me what I’m working towards. It makes all the petty little things seem so small.

And NOW, I am completely done with my senior capstone class so I am going to watch an episode of Sex & the City (TV twice is one day?? Who am I!) and probably fall asleep four minutes into it. I did wake up before 5am after all ;)

P.S. This is the song I listened to on repeat during my workout when Father of the Bride was on commercial. Love it.

Biscuits (It’ll make sense later)

This morning I woke up at 4:00am. Try as I might, my body was not going back to sleep. I made myself lay there until 5:15. It reminded me of when I was a toddler and my parents put a clock next to my bed, teaching me to wait until 6:00am to get up on weekends ;)

Around 5:30 I was sipping my first cup of coffee. Now I have a few extra hours in my morning that I didn’t expect, so here I am. Thought I would put together one more spring break post before I break into some new territory with projects I’m working on for next week. A lot of my California friends have different spring break schedules and many are on vacation now, so I feel like it’s still appropriate to bask in the spring-y-ness one more time :)

Any college kid will tell you one of the best parts about coming home is family dinners. If not, then A.) they are lying or B.) their momma’s homecooking left a lot to be desired… (insert smirky emoji here). Healthy Food Collage on Strong Like My Coffee (Stronglikemycoffee.com)

You go 18 years eating the same kinds of dinners at home with your family, until suddenly you’re living on your own. Dining halls, communal kitchens, take-out, fast food, delivery, cooking for yourself….it’s just not the same. I’ve come a long way in following recipes and recreating family favorites, but eating by yourself in a tiny apartment will never compare to eating at home.

In 9 days, we only went to a restaurant once. My parents had LOADED UP on produce at my request (well, they usually do anyways) and we had the most colorful dinners.

I told myself that I was completely inspired to return from spring break and start cooking similar colorful balanced meals……and then I went and got three sushi rolls. It’s a work in progress.

My dad pumped up the tires in our bikes so that I could take a leisure ride around town and he could ride with me on my Sunday long run for the marathon training. I probably spent more time snapping pictures than pedaling. 90 degrees feels like heaven after a frigid Flagstaff winter.

Bike Path in Spring on Stronglikemycoffee.comAnd of course the sea-level (extra-oxygenated!) air did wonders for my marathon training. I was able to get in another great Yasso 800s workout on Wednesday, some cross training, and a killer long run. I set out for 15 miles on my favorite running path at home. This time, I had water and fuel along the way! I used the Vega gel for the first time, which is made with dates, water and grape juice rather than straight sugar like other brands. I felt better about putting something a little more “natural” in my body during the run…..but it didn’t taste great. Seemed to do the trick though because I ran my last couple of miles at 7:00 pace, averaging 7:18 overall.

Also got to spend some quality time with my girl Missy….HAH whattajoke. That maltese of ours has grown quite comfortable being the “only child” now that I’ve been gone off and on for four years. She onced used to cuddle and love me. Now she has a jealous side whenever I visit my parents. She literally pouts when I take my mom’s attention away from her. (This is coming from a spoiled only-child herself.) She did watch me as I curled my hair, trying to imitate Miranda Lambert’s from the pool scene in her Little Red Wagon music video. Nailed Failed it!

Kacey Musgraves, Queen of Country Cool, has been on my playlist since I heard her hit Follow Your Arrow. Biscuits is actually pretty similar, and equally adorable. Good message and reminder to stay focused on myself during the last weeks of college. We need less negative comparisons in our lives because that is just stressful. “Pouring salt in my sugar won’t make yours any sweeter.” Hope you enjoy it as I do. :)

So much for “Staycation”

Spring Break officially started on Friday. How else would I start my vacation but with a 14 mile run? I made it through the looooong outting (1 hour 45 minutes) by repeating the same 8 songs over and over and over. My iPod has 1,299 songs but I have my go-to’s when I need serious motivation.  Since I have to run by myself, I opted to skip water and fuel this time (going against all running advice, I know) which I don’t want to do again. This weekend I’ll have a running buddy, but the next 9 long runs I’ll need to enlist a friend to ride a bike next to me. Accepting applications now ;)

I stretched, iced my quads and refueled with some good ole’ chocolate milk afterwards though. And yes, that is frozen edamame on my legs. When you don’t have ice, you make substitutes and if peas are A-OK then why not soy beans?!

Long Run Recovery on Strong Like My CoffeeLast post, I mentioned my “staycation” plans for this Spring Break. But then I remembered something….. I don’t like being cold, alone, or sedentary for too long. Sooo after my long run, I packed myself up and headed west. Senior year has made me more spontaneous. Southern California greeted me with 92 BEAUTIFUL DEGREES. I might not leave.

I’ve been here less than 24 hours and already the sunshine and seafood and company have made me 100% happier. Even though it’s Spring Break, fitness and nutrition are still priorities. It’s actually easier to workout and eat whole nutritious foods on vacation because we aren’t stressed or busy or exhausted from work. This morning I even treated myself to some brand new Asics, which I immediately broke in on a 7 mile run. My feet felt like they were running on clouds because I’d worn my old pair down so much through this marathon training.

On the agenda for tomorrow morning is a long bike ride down my favorite running path, a gym date and the rest is TBD. Just how I like it :)

P.S. THIS song came on during our shopping outting today and we learned what H.A.A.M. stands for. Apparently it is not Hard As A Muscle…
